How To Make Berry and Banana Bread

Berry and Banana bread is a wonderfully stodgy, belly filling bake. Spread with butter or eat alone. I often pack this in my children’s school lunches, perfect for keeping them full until hometime.

How To Make Berry and Banana Bread

Ingredients

  • Butter, softened
  • Brown Sugar
  • Eggs beaten
  • Bananas, peeled and mashed
  • Self Raising flour
  • Baking Powder
  • whole milk
  • 1 handful of mixed berries (I used blackcurrants, redcurrants and Raspberries)

Instructions

  • Preheat oven to 180°C
  • Line a loaf pan with baking paper
  • Using an electric mixer, cream butter and sugar, add beaten eggs slowly, mixing as you pour
  • Stir in banana
  • Sift flour and baking powder on top
  • Add milk. Stir with a wooden spoon until combined
  • Fold in the mixed berries
  • Spoon mixture into loaf pan
  • Bake for 45 to 50 minutes

  • 150 g Butter, softened
  • 200 g Brown Sugar
  • 2 Eggs beaten
  • 2 Bananas, peeled and mashed
  • 240 g Self Raising flour
  • 1 tsp Baking Powder
  • 110 mls whole milk
  • 1 handful of mixed berries (I used blackcurrants, redcurrants and Raspberries)

  • Preheat oven to 180°C
  • Line a loaf pan with baking paper
  • Using an electric mixer, cream butter and sugar, add beaten eggs slowly, mixing as you pour
  • Stir in banana
  • Sift flour and baking powder on top
