Berry and Banana bread is a wonderfully stodgy, belly filling bake. Spread with butter or eat alone. I often pack this in my children’s school lunches, perfect for keeping them full until hometime.

How To Make Berry and Banana Bread

Ingredients
- Butter, softened
- Brown Sugar
- Eggs beaten
- Bananas, peeled and mashed
- Self Raising flour
- Baking Powder
- whole milk
- 1 handful of mixed berries (I used blackcurrants, redcurrants and Raspberries)
Instructions
- Preheat oven to 180°C
- Line a loaf pan with baking paper
- Using an electric mixer, cream butter and sugar, add beaten eggs slowly, mixing as you pour
- Stir in banana
- Sift flour and baking powder on top
- Add milk. Stir with a wooden spoon until combined
- Fold in the mixed berries
- Spoon mixture into loaf pan
- Bake for 45 to 50 minutes

- 240 g Self Raising flour
- 1 tsp Baking Powder
- 110 mls whole milk
- 1 handful of mixed berries (I used blackcurrants, redcurrants and Raspberries)
