Gooey Fudgy Brownie Bites

Ok. I’m not one to toot my own horn. But you know what ? this time, I’m gonna! I truly believe these to be the best brownies on the planet. I think, if my husband didn’t already love me, he absolutely would after I baked him a batch of these! That’s quite the statement isn’t it? Proof is in the pudding as they say! This is my most requested bake at home. I cut them into bite size squares deliberately, because I feel it somehow lessens the guilt! But you can of course cut them into bars, bigger squares, or just haul the whole thing out of the tin and eat it like a giant chocolate bar! Bakers choice.

Gooey Brownie Bites

Delicious Easy to make Fudgie Brownies

  • 115 g Salted Butter (melted & hot)
  • 1 tbsp olive
  • 225 g Granulated
  •  2 Eggs
  • 2 tsp Vanilla extract
  • 70 g Plain lour
  • 50 g Cocoa Powder


  • Place the hot butter, sugar, olive oil & vanilla extract in a large bowl, mix together
  • Sift in the flour and cocoa powder. stir well
  • Add the eggs and mix well with wooden spoon.
  • Pour into a lined cake tin ( I used a loaf tin)
  • Bake at the bottom of the oven for 20-25 minutes. Tip** To test wiggle the pan, if the centre of the Brownie no longer's ready
  • Allow to cool, cut into bite size chunks..or bars if you prefer.
