An easy to make, Incredibly delicious Gooseberry Jam recipe that requires minimal skill, perfect for beginners! Follow my simple step by step recipe for a Homemade Gooseberry Jam you and your family will love!
What’s so great about Gooseberry Jam?
Well, a few things!
- Gooseberries have the wonderful benefit of being naturally high in pectin, making Gooseberries a good choice for achieving a good set.
- Gooseberries are slightly tart, which I think makes for a wonderful Jam! Even if your not a fan of Gooseberries in their natural form and don’t like the taste, I believe you will change your mind once you taste this Jam!
- My Gooseberry Jam requires only three ingredients, Gooseberries, sugar and water, its so easy to make!
- Homegrown- Living that good life! I love growing my own Gooseberries! Grow, Harvest and Cook…there is so much joy in growing your own food.
I am all about ‘Homely’ hence the name of this blog! and there is something very homely about making your own Jam, I find it a very comforting process, armed with my wooden spoon and apron, its a wonderful way to spend an afternoon! You can really taste the difference between shop bought and homemade, there is a richness to homemade Jam, that is somehow absent in the mass produced. There is so little effort or skill required, its such an easy cook. I love watching it bubble! And the smell? Incredible!

How to make 3 Ingredient Gooseberry Jam

Ingredients
- Gooseberries (top and Tailed)
- To Top and tail a Gooseberry simply means to snip off the stem and the flower ends from each one with some kitchen scissors.
- Granulated Sugar
- Why use Granulated Sugar and not Jam Sugar?- No need for Jam Sugar(which has added Pectin), because Gooseberries already naturally contain high levels of pectin
- 5 tbsp Water
Instructions
- Place a small plate in the freezer ( this is to test the jam later)
- Place the Gooseberries & water in a large saucepan, place on a medium heat, simmer until tender.
- Add the sugar, stir to dissolve. Boil for 15-20 minutes until set.
- To test the jam, retrieve the plate from the freezer spoon some jam on it, then push the jam with your finger…if it wrinkles it’s ready, if not it needs to cook a little longer
- While still hot pour the Gooseberry Jam into sterile jars
- If using old Jars use wax discs to seal
Fresh or Frozen Gooseberries?
Either will work in this recipe, I often Harvest my Gooseberries and freeze them whole for Crumbles, Cakes or Jams later in the year.
If using Frozen Gooseberries be sure to defrost them first.
How long will 3 Ingredient Gooseberry Jam Keep?
Unopened Gooseberry Jam will keep for up to a year in a cool dark Cupboard. Opened, store in the fridge and consume within 14 days
Gooseberry Jam Serving Suggestions
Serve on toast, pancakes, scones, swirl in Yoghurt and Porridge, its particularly good in my Jam drop biscuits. Its very adaptable, I look forward to Gooseberry season every year.
3 Ways To Sterilise Jars For Sauces and Preserves
Instructions
Boil– Fill a pan with cold water until the jars are covered. Bring to the boil, then continue to boil for 10 minutes, turn the heat off, then cover the pan to keep the jars warm until you are ready to fill them.
Dishwasher-Remove any rubber seals and lids, place on the dishwasher rack and run a hot wash. Do not put any cleaning solutions in your dishwasher. Time your dishwasher to finish when you’re ready to fill the jars.
Oven-Heat oven to 140C. Wash the jars in hot, soapy water, rinse well. Place the jars on a baking tray and put them in the oven to dry completely. If using Kilner type jars, boil the rubber seals, do not put them in the oven, the dry heat will damage them.
