Pancakes For Breakfast
There’s nothing quite like a delicious pancake in the morning. This pancake recipe is sure to be a hit and one you’ll come back to time and time again! Easy to make, with a hint of Vanilla..they taste incredible!
The History of Pancakes
The first recorded mention of pancakes was in 600 BC in ancient greece. A poet named Cratinus wrote ‘a pancake hot and shredding morning dew’. The Greeks version of the pancake was a ‘tiganites’ and was eaten for breakfast alongside warm honey, nuts and fruits.
One of the first printed recipes for pancakes date back to the 16th century in the French cookbook Livre fort excellent de cuysine (1542). The Humble pancake soon became extremely popular and was regarded as an affordable food staple for families. It was easy to make, cheap, and most importantly…filling!
The Pancake started to gain momentum in the UK during the 1600’s. Unlike stacked American Pancakes which are chunkier and fluffier, the british homemade pancake is traditionally flat and drizzled with fresh lemon Juice and sprinkled with sugar.

How To Make a Baked Skillet Pancake

Ingredients
For The Pancake
- Plain Flour
- Milk
- Eggs
- Granulated sugar
- Vanilla extract
- Baking Powder
- Salt
- Butter
Toppings
- Mixed Berries
- Icing Sugar
- Vanilla Ice cream
- Golden Syrup
Instructions
- Place the flour, milk, eggs, sugar, vanilla, baking powder and salt in a bowl and mix with a whisk or electric hand mixer until smooth
- Rest the batter: Leave the batter to rest for around 20 to 25 minutes. This gives the flour time to absorb the liquid and thicken a little.
- Preheat the oven to 210℃
- Place 2 tbsp of Butter in a skillet pan and place in the oven for a minute or less until melted
- Swirl the butter around the pan and pour the pancake Batter on Top
- Place the skillet in the oven. Bake until the pancake is lightly browned, around 15 to 20 minutes.
- Dust with Icing Sugar,Top with your choice of mixed berries, add a dollop of Ice-cream and some golden syrup
- Serve from the pan or transfer to a plate. Dust with icing sugar, berries, Ice-cream and syrup.

Absolutely! Pancake batter can be stored in the fridge for up to 4 days in an airtight container.

Yes! Store pancake batter in the freezer for up to 1 month. When you want to use it- thaw overnight in the fridge for homemade pancakes the next morning
How Long Will Baked Skillet Pancakes Keep in The Fridge?
Skillet Pancakes will keep in the fridge for up to a week. Store them in a zip lock bag or container.
Can You Freeze Baked Skillet Pancakes?
Yes! You can freeze them for up to 3 months. Wrap them in cling wrap, pop them in a freezer bag and freeze. Thaw at room temperature, reheat in the microwave for around 1 minute.
