  • Healthy– A Nutritional Powerhouse Muffin! Oats are a great source of soluble fibre, keeping you fuller for longer. Cranberries are packed with beneficial vitamins and an excellent source of Ursolic Acid, a plant compound with antioxidant, anti-inflammatory and potential anti-cancer effects. Bananas are rich in nutrients which support digestive health, weight loss and can improve blood sugar levels

How To Make Banana and Cranberry Oat Muffins

Ingredients

  • Flour
    • I used Plain flour, you could switch for Wholemeal flour, or go half and half
  • Rolled Oats
    • Rolled oats are best, they give the Muffins a lovely Wholesome texture.
  • Sugar
  • Salt
  • Bicarbonate Soda
  • Baking Powder
  • Cinnamon
    • I used powdered Cinnamon, it gives a lovely warm spiced flavour to the muffins.
  • Egg
  • Milk
    • I used Semi Skimmed Milk, you could substitute with any dairy type milk or go for plant based Milks, Almond, Oat or Soy Milk
  • Olive Oil
    • Substitute with Vegetable oil if that’s all you have
  • Vanilla Extract
  • Mashed Bananas
  • Cranberries
    • Or any small berry of your choosing

Instructions

  • Preheat the oven to 200°c
  • In a mixing bowl combine the flour, Rolled Oats, Sugar, Baking powder, Bicarbonate of soda, Cinnamon and Salt, set aside.
  • In a separate bowl beat the egg then mix in the milk, oil, and vanilla. Stir in the mashed bananas.
  • Now add the Banana mix to the flour mix, stir with a wooden spoon until completely combined
  • Add 2 Handfuls of Chopped Cranberries, stir in.

  • Line a 12 cup muffin tray with muffin cases. Fill each muffin case to the top with the batter.
  • Bake at the bottom of the oven for 15-18 minutes until a skewer comes out clean

How to Store Banana and Cranberry Oat Muffins

  • These muffins will keep for 5 days when stored in an airtight container at room temperature.
  • Can you freeze them? Absolutely! Wrap them in cling film, pop in a freezer bag, freeze for up to 3 months. Thaw at room temperature, or ping them in the microwave for 20 seconds.

  • 1 pinch Salt
  • 1 tsp Bicarbonate Soda
  • 2 tsp Baking Powder
  • 1 tsp Cinnamon
  • 1 Egg

  • 1 tsp Vanilla Extract
