First a Little Onion Ring History!

Let me take you back to England 1802! A chap named John Mollard authored a cookbook called “The Art of Cookery Made Easy and Refined,”. This cookbook was to be very popular in the houses of nobleman, gentleman, and tradesman.

While the Onion ring today is served alongside pub meals and in places like mcdonalds and Burger king. It first graced the tables of Nobles and other members of the upper class. It was a classy food that only the wealthy could afford!

John Mollards 1802 Recipe for Onion rings differs a little from the version we know today. In his recipe, he calls them “fried onions with Parmesan cheese.” and while the preparation of the onions is the same, he adds grated cheese to the breading mix and goes on to fry them in lard!

Back then if a recipe called for frying, it was fried in Lard! Lard is made from 100 percent animal fat that has been separated from the meat. Most lard back then and today is made from pork meat. A process called rendering is undertaken, whereby the fattiest parts of the pig such as the bum, belly and shoulder are cooked slowly until the fat is melted and then separates from the meat. It kinda puts you off Lard Doesn’t it ! I have opted for a less fatty option and will be using Vegetable oil for my Onion Rings today.

How To Make Easy Battered Onion Rings

WHAT YOU’LL NEED FOR THIS RECIPE

Ingredients

  • Large onions, cut into rings
  • Plain flour
  • Milk
  • Egg
  • Vegetable oil
  • Salt and Pepper
  • vegetable oil for frying

Directions

  • Peel the Onions and carefully slice each one into discs which are between ¼” and ½” wide (see video)
  • Seperate the onion rings from the discs and place them in a large bowl of Ice water for 1 hour.

Battered onion Rings

  • After the hour drain and pat the rings dry with paper towels
  • In a large bowl add the flour, egg, Oil and milk and whisk together until a gloopy batter forms
  • Season the batter with Salt and Pepper

  • Heat around 2″ of Vegetable oil in a deep pan until searing hot (you want the onion rings to sizzle as soon as they meet the oil)
  • Work in batches and dip onion rings in batter until evenly coated, then place carefully in the pan, fry for around 1 minute each side until crispy and golden

  • Place each cooked onion ring on a paper towel to soak up any excess fat before serving
  • Serve while still hot

Why do you need to Soak onion rings in Ice water first?

Onion Rings are treated to a cold bath before cooking for 2 reasons…

  1. The cold bath draws moisture out of the onion rings, much like how the same process draws starch out of hand cut chips
  2. The cold bath also helps to dilute the sulfer content in onions, turning them sweeter and milder in taste.

How long will Battered Onion Rings Keep?

Like most fried foods, onion rings really are at their best when fresh out of the pan. However, you can keep leftovers in an airtight container in the fridge for up to 3 days and reheat them in an airfryer to help crisp them up again.
