They’re So Naughty!

As far as breads go, these are one of the naughtiest! Let me explain…Theses baguettes have a buttery crumb, but also a buttery garlic and herb glaze! That subtle shine you see in the picture above is a deliberate buttery indulgence!

It was my cheat day, and I thought…how can I make these baguettes even better?! If in doubt…reach for the butter! I added some herbs and garlic and OMG I have a new favourite Baguette!

My 12 year old son Jack has a system of rating all my Bakes! And after Sampling, not 1 but 3 of these baguettes! He gave me his ruling…

He decided, that along with my New Orlean Beignets, Gooey Chocolate orange Cake, Salt and Pepper Bread and Chocolate Orange Flapjacks these Garlic and Herb Baguettes made his top 5! That is high praise! Let me tell you, my son is quite the aficionado when it comes to home baking! So if he feels them worthy for a top 5 position…they must be really good! I have to Agree..they made my cheat day a very good one!

What Is A Baguette ?

A typical baguette is a long type of bread with a crisp crust and a soft crumb they average around 65cm long but can be as long as 1 metre! The Baguette originated in France and became a popular bread amongst French bakers during the 18th Century. From there it quickly gained praise worldwide due to its flavour and appearance and soon became symbolic of French Culture. The word baguette, is self explanatory, meaning “wand,” “baton,” or “stick,”.

True Story!

I once broke a tooth on a baguette! Not kidding, the timing was particularly awful as it was 2 days before my wedding! I was thankfully able to get an emergency Dental appointment and the offending tooth was fixed just in time for the big day! All’s well that ends well!…but I never forgot that! And now, thanks to that memory… I approach French Baguettes with a great deal of caution! Which is why my Garlic and Herb Baguettes have a soft crust instead of a crisp one!

What You’ll need for this Recipe

Mini Baguettes Garlic and Herb

Ingredients

(** As always the full detailed recipe can be found on the Recipe card at the end of the post)

For The Dough:

  • White Bread Flour
  • Quick action yeast
  • Warm water
  • Melted unsalted butter
  • Granulated sugar
  • Salt

For The Butter Glaze:

  • Butter
  • Salt (Only if using unsalted Butter)
  • Garlic Cloves
  • Italian Mixed Herbs

Method

1. Gather and Weigh all Your Ingredients

2. Add The Bread Flour and Yeast to a bowl and stir together with a wooden spoon until combined

3. Add the salt, Sugar and warm water and mix again with a wooden spoon until a shaggy dough forms

4. Melt The butter in the microwave for a few seconds and allow to cool a little. Add the cooled melted Butter to the dough and fold in with your hands or use a rubber spatula

5. Turn out the dough onto a floured surface and knead for 5 minutes until smooth and stretchy

6. Place the dough into a lined or oiled bowl or a proving bowl, cover and allow to rise for 90 minutes until doubled in size

7. Once risen turn out the dough onto the counter and divide into 8 portions

8. Roll each piece into log-like shapes and place them on to a lined baking tray. Cover loosely with cling film and let them rise a second time for 1 hour

9. Preheat the Oven to 200 c

10. Bake in The Oven for 10-14 minutes until golden brown and the base of the bread drums hollow. While they are baking make the Butter Glaze…

11. Add The Butter, Salt, Herbs and garlic to a small saucepan and cook on a low heat until the butter has melted.

12. Remove the Baguettes from the Oven and Brush immediately with the warm Butter Glaze….Be Generous!

Can Be eaten Cold…But best served warm!

Serving Suggestions For My Garlic and Herb Mini Baguettes

Its Barbeque Season here in the UK! And these Baguettes are perfect for Stuffing with sausages, chicken and any other Barbequed delight you have in Mind!

They are also a fabulous ‘On the side’ bread.. Pile them high and tuck in!

You could even eat them alone…they are packed with flavour and are essentially a meal unto themselves! There is no shame in eating this bread like you would a banana..just grab and go!

How Long Will They Keep?

I doubt they’ll last the day! But they should be fine for up to 3 days in an airtight container at room Temperature

Can You Freeze Garlic and Herb Mini Baguettes?

Yes, just skip the Butter Glaze before freezing. Wrap in Cling Film and pop in a Freezer bag and freeze for up to 3 months. Thaw at room temperature and pop them in the oven at 180c for 4-5 minutes then brush on the Butter glaze as soon as the come out.

  • 360 g White Bread Flour
  • 1 x 7g Sachet of Quick Action Yeast
  • 240 ml Warm Water (Not hot it will kill the yeast)
  • 45 g Melted Unsalted Butter
  • 2 tbsp Granulated sugar
  • 1 1/2 tbsp Salt

For The Butter Glaze

  • 45 g Butter
  • 1/2 tsp Salt (Only if using Unsalted Butter)
  • 2 grated Garlic Cloves
  • 1/4 tsp Mixed Italian Herbs
