What are Grinch Sugar Cookies

These Gooey Chewy Grinch Cookies are inspired by the popular children’s book by Dr Seuss ‘The Grinch Who Stole Christmas’. Even if you haven’t read the book, its likely you’ve seen the movie! Jim Carey does an exceptional job of bringing the Grinch to life!

What makes these cookies ‘Grinch like’ ? – Well, lets see? Most importantly their Green! The red Smartie represents the Grinch’s heart ….“And what happened, then? Well, in Whoville they say – that the Grinch’s small heart grew three sizes that day. And then – the true meaning of Christmas came through, and the Grinch found the strength of ten Grinch’s, plus two!”

Ten Grinch’s, plus two!” = 12

This recipe is enough for 12 gorgeous green Grinch Cookies! These bright and delicious cookies will not last long! I generally make 2 batches for this very reason.

Tips for a Successful Batch of Grinch Sugar Cookies

Keep the oven Closed– As tempting as it is to sneak a peek, try not to! You will let the hot air out and this will effect how evenly the cookies bake.

Timing- I always take my cookies out of the oven while the centres are still slightly soft, they will continue to cook while on the hot baking tray once out of the oven. This allows for a chewy bakery style cookie that is not overbaked.

Don’t over mix– I didn’t use an electric mixer for this bake, a wooden spoon is sufficient. A gentle touch is required for this type of cookie.

How to Store Grinch Sugar Cookies

Store for up to 5 days in an airtight container at room temperature. These cookies can be frozen too, simply wrap in clink film, pop in a freezer bag and freeze for up to 3 months, thaw at room temperature.

Want to make ahead of time?

No problem! For fuss free Christmas eve baking – make the dough, roll into balls and freeze. On the day you intend to bake, take them out of the freezer, allow them to thaw a little while the oven preheats, roll them in sugar, press in the smarties and bake!
