What are Grinch Sugar Cookies

These Gooey Chewy Grinch Cookies are inspired by the popular children’s book by Dr Seuss ‘The Grinch Who Stole Christmas’. Even if you haven’t read the book, its likely you’ve seen the movie! Jim Carey does an exceptional job of bringing the Grinch to life!

What makes these cookies ‘Grinch like’ ? – Well, lets see? Most importantly their Green! The red Smartie represents the Grinch’s heart ….“And what happened, then? Well, in Whoville they say – that the Grinch’s small heart grew three sizes that day. And then – the true meaning of Christmas came through, and the Grinch found the strength of ten Grinch’s, plus two!”

Ten Grinch’s, plus two!” = 12

This recipe is enough for 12 gorgeous green Grinch Cookies! These bright and delicious cookies will not last long! I generally make 2 batches for this very reason.

(The full recipe, measurements and video can be found at the end of the post on the recipe card, this section is just a summary)

  • Unsalted Butter
  • Granulated sugar + extra for rolling the cookies in
  • Egg Yolks
  • Green Food Colouring – I used Liquid, but gel can be used too
  • Vanilla Extract – Adds sweetness and flavour
  • Plain Flour
  • Salt
  • Bicarbonate Soda – Helps leaven the dough, creating a soft fluffy cookie
  • Red and Green Smarties

Instructions

  • Preheat the oven to 180°c
  • Add the Butter to a large glass mixing bowl, microwave for a few seconds until the butter has melted
  • Stir in The Sugar, Egg Yolks, Vanilla Extract and green Food Colouring. You judge how green you would like your cookies, bear in mind they may lighten during baking (see the video on the recipe card at the end)
  • Stir in the flour a little at a time. Add the Bicarbonate of Soda and salt, stir well until no traces of Flour can be seen.
  • Fill a saucer with granulated sugar
  • Scoop a tablespoon of Cookie dough, roll into a ball, then roll in the Sugar.
  • Space the Cookie dough balls evenly on a lined baking tray. Press in the Red and Green Smarties
  • Bake for 8-10 minutes, until cracks form on the surface of the cookie

Tips for a Successful Batch of Grinch Sugar Cookies

Keep the oven Closed– As tempting as it is to sneak a peek, try not to! You will let the hot air out and this will effect how evenly the cookies bake.

Timing- I always take my cookies out of the oven while the centres are still slightly soft, they will continue to cook while on the hot baking tray once out of the oven. This allows for a chewy bakery style cookie that is not overbaked.

Don’t over mix– I didn’t use an electric mixer for this bake, a wooden spoon is sufficient. A gentle touch is required for this type of cookie.

How to Store Grinch Sugar Cookies

Store for up to 5 days in an airtight container at room temperature. These cookies can be frozen too, simply wrap in clink film, pop in a freezer bag and freeze for up to 3 months, thaw at room temperature.

Want to make ahead of time?

No problem! For fuss free Christmas eve baking – make the dough, roll into balls and freeze. On the day you intend to bake, take them out of the freezer, allow them to thaw a little while the oven preheats, roll them in sugar, press in the smarties and bake!
