What Makes MY Poppy Seed Bread rolls so special?
Oooh are you in for a treat! Thanks to their enriched dough, these rolls have a light and fluffy crumb, soft crust and sweet, buttery taste. In less than 2 hours they are mixed, proved and baked…which is pretty quick work for an enriched dough bread! The Poppy seeds add a nut-like aroma and offer a mild nutty flavour, when paired with the Butter Honey Glaze…they are just heavenly!
WHAT IS ENRICHED DOUGH?
An Enriched dough is simply a dough that has fats, dairy and Sugar added. These elements give the bread that soft and buttery texture we all love! A richer more flavoursome bread than the typical day to day breads that are made with just flour, water, salt and yeast.
Enriched Bread examples are Brioche, Babka, Japanese Milk Rolls, and hot cross buns.
How To Make Poppy Seed Bread Rolls

What You’ll Need
Ingredients

- Plain Flour
- Salt
- Milk
- Sugar
- Quick action Yeast
- Warm water (Not Hot)
- Olive oil
- Poppy seeds
For The Honey Glaze
- Butter
- Honey
- Poppy Seeds
Method
- Add the flour and salt to a large mixing bowl and stir until combined
- Add the Sugar and yeast, stir again.
- Make a well in the centre of your mix and pour in the warm water and milk, stir with a wooden spoon until a shaggy dough forms
- Add the Olive oil and stir again with the wooden spoon.
- Add the poppy seeds and fold in
- Place the dough on a floured surface and knead for 5 minutes until smooth and stretchy * If the dough feels a little too wet add sprinkles of flour until workable
- Shape the dough into a ball and place in a proving Bowl, or oiled bowl. Cover and allow to rise in a warm place for 1 hour or until it has doubled in size.
- Cover a baking tray with baking paper.
- Turn out the dough and divide into 4 equal pieces, shape each piece into round balls, place them on on the baking tray, cover and allow them to rise for a second time for 30 minutes.
- Preheat the oven to 200°C.
Make The Honey Glaze
- Place the Honey and Butter in a bowl and pop in the microwave for a few seconds until melted
- After the second rise, brush the dough balls with the honey butter
- Using a Sharp knife or Lame score the top of each dough ball
- Sprinkle with Poppy Seeds and Bake in the oven for 20-30 minutes until golden brown and the base of each roll drums hollow.
- Transfer to a wire rack and leave to cool.
By Hand Or By Mixer?

Making the dough can be done by hand or with the use of a stand mixer. For the longest time I made all my bread doughs by hand…I still do in some cases. How To Shape The Rolls
- When it comes to shaping the dough, I first dump the risen ball of dough onto the counter and cut into 4 quarters….I basically eyeball it! But, if you lean on the side of perfection (Nothing wrong with that!) You could weigh the dough and then divide the amount by 4 and weigh out your dough individually.
- To form a ball tuck the dough under itself to create a smooth top and then press down gently and twist to even the dough ball out. They don’t need to be perfect, they will taste incredible all the same!
- Before Baking place them on a lined baking tray, not touching. Glaze, then score. * See Recipe card at the end of the post
Can You Make More than 4 Rolls?
Absolutely, Split the dough into 6 for smaller, but still delicious rolls
HOW LONG WILL Poppy Seed Bread ROLLS KEEP FOR?
Like most homemade bread they are at their best on the day of baking. But will keep for upto 3 days if wrapped well and kept in the bread bin
Can You Freeze Poppy Seed Bread Rolls?
Yep, simply wrap them in cling film, pop them in a freezer bag and freeze for up to 3 months. Thaw at room temperature

- 170 ml Warm water (not hot-hot water will kill the yeast!)
- 1/2 tsp Salt
