Meatballs A La Mama!

All The Way from Scratch! My Kids love nothing more than a tangled heap of Spaghetti, topped with a generous pile of Homemade meatballs! Sprinkle them with some grated cheese and you have a delicious belly filler the whole family will love! Homemade Comfort food at its best!

MeatBall Origins

Believe it or not Meatballs were not invented by the Italians! Nope! they were not the first people to think of balled meat!

It was the Ancient Persians who first brought the meatball to our attention! Originating from the Persian Kofta– A Kofta was a type of meatball that contained minced or ground meat, spices and either rice, bulger or mashed lentils.

It served as inspiration to the Italians! And they created their own version called the Polpette, which contained meats such as beef or veal as well as eggs, garlic, parsley and cheese. All the ingredients would be mixed and then formed into small balls…The meatball was born! It became a big hit amongst Italians and was served as a main course or in broths and soups.

It wasn’t until 1880 when Italian Immigrants brought the recipe to America that the infatuation with the meatball began. It was there, that the meatballs partnership with Spaghetti was formed for the first time ! – In New York it was an especially popular dish!- Who doesn’t love a pile of Spaghetti and Meatballs!

How To Make Quick and Easy Air fryer Italian Meatballs

What You’ll Need

Ingredients

( As always the full detailed recipe can be found at the end of the post on the recipe card)

  • Minced beef (I used Lean Beef Steak Mince 5% Fat)
  • Eggs
  • Fresh Breadcrumbs (from 2 Pieces of medium sized Bread)
  • Red Onion
  • Garlic cloves
  • Olive Oil
  • Salt
  • Black pepper
  • Mixed Herbs

Method

1. Tear up 2 pieces of day old bread and add to the food processor and whizz until it resembles fine breadcrumbs. Put them in a large mixing bowl and set aside

2. Add the Red Onion and garlic cloves to the food processor and whizz until minced

3. Add the Eggs to the food processor and whizz until mixed with the onion and garlic

4. Pour the Egg mix into the mixing bowl with the breadcrumbs

5. Add The Salt, Pepper, Mixed Herbs and Olive Oil and mix together with a wooden spoon

6. Add the Minced beef and use your hands to combine all the ingredients together

7. With your hands Form Small Balls from the Meat (I managed to make 24)

8. Place Meatballs in A Single layer in the Airfryer

9. Set To Airfy at 200 C for 12-14 minutes or until browned and cooked through

10. Serve alone or Toss in Marinara sauce or any Tomato based Sauce and serve with Pasta. Finish off with a sprinkling of Mozzarella or Parmesan cheese!

Leftover Air fryer MeatBalls ?

In our house Leftover Meatballs is not a regular Occurance! However, should you find yourself with a pile of surplus Meatballs….

  • Pop the leftover meatballs in an airtight container in the fridge for up to 4 days.
  • To Freeze leftover Meatballs arrange them in a single layer on a baking sheet (not touching) and place in the freezer. Once they are frozen solid, pop them in a freezer bag and freeze for 1-2 months

How To Reheat Meatballs

  • To Warm Up Meatballs Stored in The Fridge -Microwave them a minute at a time until heated through.
  • To reheat Frozen Meatballs – Place the frozen meatballs in a baking dish, cover with foil and bake for 20 minutes at 180 C or until heated through

Ingredients

  • 750 g Minced beef (I used Lean Beef Steak Mince 5% Fat)

  • 2 tbsp Olive Oil
  • 1 1/2 tsp Salt
  • 1 Tsp Black Pepper
  • 1 tsp Mixed Herbs

Instructions
