The Relaxing Cake
My Lavender and Lemon white chocolate cake is a light aromatic summer sponge cake. Just beautiful and smells amazing. I call this my calming cake. Lavender is well known for its soothing properties, often used to help relieve anxiety and aid relaxation. Serve this alongside a cup of tea, you have the perfect stress reliever.
How to make Lavender and Lemon Chocolate Cake

Ingredients
- Eggs
- Unsalted butter
- Caster sugar
- Dried Lavender flowers
- Plain flour
- Baking powder
- Salt
- White chocolate chips
Instructions
- Preheat the oven to 190° fan
- Use a stand or hand mixer to blend Butter, Sugar & lavender flowers
- Sieve the flour & baking powder on top, mix again
- Mix in the white chocolate chips
- Pour the cake batter into a lined loaf tin
- bake for 30 minutes, turn out onto a wire rack to cool
- In a small bowl, mix the icing sugar & lemon juice until you have a gloopy consistency
- Once the cake has cooled, pour the icing on top, decorate with lavender & rose petals

- 2-3 tbsp Lemon Juice
- Dried Lavender flowers for sprinkling
