How To Make An Upside Down Peach Cake

This easy to make Peach upside down cake is bursting with Juicy flavoursome peach slices and warm Cinnamon. A retro dessert that takes me back to being a kid in the 80’s!

The fabulousness that is that old family favourite…The upside down cake! An opportunity to get creative I say! I just love the whole process, mixing the batter, slicing the fruit, creating pretty patterns, and then, the reveal! Lifting off the cake tin to admire all that time and effort, pure joy! How to make Peach Upside Down Cake

Ingredients

  • Margarine
  • Granulated sugar
  • Eggs
  • Vanilla Extract
  • Plain flour
  • Baking powder
  • Ground cinnamon
  • Soft brown sugar
  • Peaches, pitted, sliced into wedges ( you don’t need to peel)

Instructions

  • Preheat your oven to 170°c
  • Line an 8 inch cake tin with baking paper.
  • In a bowl, cream the margarine and granulated sugar, then add 2 eggs one at a time, mixing until combined.
  • Mix in the vanilla, Add the flour, baking powder and 1 tsp of cinnamon. Mix well until you have a smooth batter
  • Arrange the peach wedges, so they cover the entire base of the pan ( see video below)
  • Spoon the cake batter on top.Arrange any left over peach wedges on top ( see video below)

  • Finish off by mixing 2 tbsp of brown sugar with 1/2 tsp of Cinnamon, sprinkle the mix on top.
  • Bake for 45-50 minutes.
  • Allow to cool, then place a plate on top of the cake pan ,flip over( see video), lift the pan and baking paper to reveal your upside down peach Cake

Upside Down Peach Cake

Servings: 8

115g of margarine

140g of granulated sugar

2 eggs

1 tsp vanilla

140 g Plain flour

1 heaped tsp of baking powder

1 1/2 tsp of ground cinnamon

2 tablespoons of soft brown sugar

3 ripe peaches, pitted, sliced into wedges ( you don't need to peel)

Instructions

Preheat your oven to 170°c
