French Apple Cake

Ingredients

  • 120 g Plain Flour
  • 120 g Butter or Baking Margarine (Room Temperature)
  • 150 g Granulated Sugar
  • 1 tbsp Granulated Sugar for Sprinkling
  • 2 Eggs
  • 1 Pinch Salt
  • 1 Tsp Baking Powder
  • 1 tsp Vanilla extract
  • 3 Tbsp Dark Rum (Or 3 tbsp of Cranberry Juice)
  • 3 Small Apples (or 2 large) peeled and cubed
  • Icing Sugar for Dusting the cake

Instructions

  • Preheat the oven to 180 C
  • Grease or line a 8-inch cake tin with baking paper
  • Peel and Chop The Apples into cubes, set aside
  • In a small bowl mix together the flour, baking powder and salt, set aside
  • Using an Electric mixer cream the butter and granulated sugar together in a large mixing bowl until fluffy
  • Next, add the eggs, one at a time the the creamed butter, continually mixing as you do.
  • Then add the vanilla and rum (Or Cranberry Juice). And mix In.
  • Add the flour mixture and mix until combined.
  • Finally fold in the Apple Chunks.Spoon the Batter into the Prepared Baking tin and smooth out.
  • Sprinkle with 1 tablespoon of Granulated sugar
  • Bake in The Centre of the Oven for 30 minutes or until a skewer come out clean.
  • The Cake should be a golden Brown. Turn out onto a Cooling Rack, allow to cool completely before dusting with icing Sugar
