Preheat the oven to 180 C
Grease or line a 8-inch cake tin with baking paper
Peel and Chop The Apples into cubes, set aside
In a small bowl mix together the flour, baking powder and salt, set aside
Using an Electric mixer cream the butter and granulated sugar together in a large mixing bowl until fluffy
Next, add the eggs, one at a time the the creamed butter, continually mixing as you do.
Then add the vanilla and rum (Or Cranberry Juice). And mix In.
Add the flour mixture and mix until combined.
Finally fold in the Apple Chunks.Spoon the Batter into the Prepared Baking tin and smooth out.
Sprinkle with 1 tablespoon of Granulated sugar
Bake in The Centre of the Oven for 30 minutes or until a skewer come out clean.
The Cake should be a golden Brown. Turn out onto a Cooling Rack, allow to cool completely before dusting with icing Sugar
