Loaded Stuffed Pizza Bread

Ingredients

For the bread dough:

  • 360 g Strong White Bread flour
  • 1 x 7g sachet of quick action Yeast
  • 1 1/2 tsp Salt
  • 1 Large Egg
  • 120 ml Lukewarm Milk
  • 80 ml Lukewarm water
  • 3 tbsp Of Olive oil or Vegetable oil

For The Filling

  • 1 tube Tomatoe Puree
  • 3-4 handfuls Grated Mozzarella cheese
  • 3 of your favourite Sausages
  • 3 Rashers Bacon
  • 1/2 Large Onion Chopped
  • 1 tbsp Vegetable oil for cooking the meat
  • salt and pepper for seasoning
  • 1 beaten egg(for egg wash)
  • 1 tsp Dried Basil

Instructions

Make the dough:

  • Place the flour and Yeast in a mixing bowl and mix together with a wooden spoon
  • Add the rest of the dough ingredients and mix with a spoon or rubber spatula until combined and a dough forms, Add sprinkles of flour if too wet
  • Turn out the dough onto a floured surface and knead for around 5 minutes until smooth and stretchy. * If it feels too wet, sprinkle some flour on the dough until more workable. ( you could also use a stand mixer for this part, with the dough hook)
  • Place the dough in a lined bowl or proving bowl, cover, and allow to rise in a warm spot for 1 hour or until doubled in size

Prepare the filling:

  • While the dough is rising, remove the Sausage casing from each sausage. Mash the naked sausages and set aside (see video & pictures above)
  • Cut 3 bacon rashes into small pieces, set aside
  • Place a frying pan over a medium heat and add the vegetable oil.Place the bacon, chopped onion and sausage in the pan and heat until cooked through. The sausage meat should resemble cooked mince. Set aside

Back to the dough:

  • Dump out the risen dough onto a floured work surface and cut into two equal portions.Roll each portion into a large rectangle (see video and pics above)
  • Spread each rectangle with Tomato Puree. Sprinkle with the bacon and sausage meat. Sprinkle with Grated Mozzarella cheese. Season with salt and Pepper.
  • Roll the Dough (like a sleeping bag) until you have 2 large logs.
  • Pinch the join with your fingers to secure the fold on each log (see video)
  • Using a Sharp Knife Cut down the centre of each log. (*This is the messy part)
  • Cut side up, twist both pieces into a spiral shape(see video). So Each dough length wraps around each other. You want to create 2 pizza like shapes.
  • Pinch the dough togethor, or use tooth picks to hold in place.
  • Preheat the Oven to 180 c
  • Brush With Beaten egg and Sprinkle with Dried Basil.
  • Set aside and loosely cover with cling wrap until the Oven has preheated
  • Pop in the oven for 20-30 minutes
  • Best enjoyed Hot from the Oven!
