Place the hot butter, sugar, olive oil & vanilla extract in a large bowl, mix together
Sift in the flour and cocoa powder. stir well
Add the eggs and mix well with wooden spoon.
Pour into a lined cake tin ( I used a loaf tin)
Bake at the bottom of the oven for 20-25 minutes. Tip** To test wiggle the pan, if the centre of the Brownie no longer jiggles..it's ready
Allow to cool, cut into bite size chunks..or bars if you prefer.
