Berry and White Chocolate FlapJacks

Ingredients

  • 150 g Butter
  • 150 g Dark Brown Soft Sugar
  • 85 g Honey
  • 300 g Rolled Oats
  • 100 g Frozen mixed Berries
  • 100 g White Chocolate Chips

Instructions

  • Preheat the Oven to 180 °c
  • Line a 20cm X 20cm baking tin with baking paper
  • Add the Butter, Sugar and Honey to a pan, heat on a low-medium heat stirring continuously until the Butter has melted and it begins to bubble
  • Take off the heat and stir in the Oats, stir well until all the Oats are coated
  • Stir in The Frozen Berries
  • Tip the oat/berry mix into the lined baking tin. With the back of a spoon press the mix into all areas of the pan (see video)
  • Pop in the bottom of the Oven for 25 minutes until golden
  • Allow to cool
  • Melt White Chocolate chips in a glass bowl over a pan of boiling water, stir continuously until completely melted. (Make sure the bottom of the bowl is not touching the surface of the water)
  • Randomly drizzle the White Chocolate over the cooled flapjack.
  • Allow the Chocolate to harden a little before cutting.
  • Cut into 9 (see video) and serve
