Healthy Apple and Oat Muffins

Ingredients

  • 100 g Rolled Oats
  • 300 g No added Sugar Apple Sauce
  • 60 g Softened Margarine
  • 70 g Granulated Sugar
  • 120 g Wholemeal Flour
  • 120 ml Semi-Skimmed Milk
  • 1 Beaten Egg
  • 1 tsp Vanilla Extract
  • 1 tsp Baking Powder
  • 1 tsp Bicarbonate of soda
  • 1 1/2 tsp Ground Cinnamon
  • 100 g Raisins

Instructions

  • Preheat the oven to 190°c
  • Pop muffin cases into a twelve holed muffin tray
  • Mix together the Rolled Oats, Applesauce, Milk, Beaten Egg, Vanilla, Butter and Sugar. 
  • Now add the Flour, Baking powder, Bicarbonate of Soda, Cinnamon and Raisins
  • Mix gently until all the ingredients are combined
  • Spoon the Batter into the Muffin Cases all the way to the top
  • Pop in The Oven for 15 minutes until a skewer comes out clean. Try not to overbake, this will lead to dry muffins.
