First put a saucer in the freezer (this is to test the jam is set later on)
Place the Lemon Juice, Pitted Cherries and Jam Sugar in a pan
Cook over a medium heat for around 35 minutes, stirring frequently until thick and glossy
After 35 minutes retrieve the plate from the freezer- spoon on a small amount and let it rest for a minute, gently push the jam with your fingertip. if it starts to wrinkle it's done...if it doesn't, it needs to cook a little longer
Pour into a sterile Jar while still hot, store for up to 1 year at room temperature
