140g of granulated sugar
2 eggs
1 tsp vanilla
140 g Plain flour
1 heaped tsp of baking powder
1 1/2 tsp of ground cinnamon
2 tablespoons of soft brown sugar
3 ripe peaches, pitted, sliced into wedges ( you don't need to peel)
Line an 8 inch cake tin with baking paper.
In a bowl, cream the margarine and granulated sugar, then add 2 eggs one at a time, mixing until combined. Mix in the vanilla
Add the flour, baking powder and 1 tsp of cinnamon. Mix well until you have a smooth batter
Arrange the peach wedges, so they cover the entire base of the pan ( see video)
Spoon the cake batter on top.
Arrange any left over peach wedges on top ( see video)
Finish off by mixing 2 tbsp of brown sugar with 1/2 tsp of Cinnamon, sprinkle the mix on top.
Bake for 45-50 minutes.
Allow to cool, then place a plate on top of the cake pan ,flip over( see video), lift the pan and baking paper to reveal your upside down peach Cake 🍰
