1 x 7g sachet of Quick action yeast
520 g of white bread flour
1 heaped tbsp of granulated sugar
2 tspĀ of salt
For Honey bath
2 litres of water
60g of Honey
For Egg wash
1 Egg
1 tbsp of water
To sprinkle
Sea salt
Cracked black pepper
Sesame seeds
Turn out onto a floured surface and knead for 5 minutes, shape into a ball.
Place in a lined or oiled bowl or a proving bowl. Cover and set aside for 90 minutes to rise...or until doubled in size.
After rise, punch the dough to release any air bubbles.
Cut the dough into 8 equal parts, shape into balls and poke holes in the middle of each ( see video)
Set aside while you ready the honey bath.
In a large pan place 2 litres of water , stir in the honey, bring to the boil. Then drop 2- 4 bagels in at a time( as long as their not touching) cook for 1 minute on each side.
The Bagels should now look fat and puffy. Place them on a lined baking tray.
Make the egg wash by mixing the egg and water together. Brush over each bagel.
Sprinkle with sea salt, black pepper & sesame seeds.
Pop in the oven for 20 minutes, turn the trays after 10 minutes for an even, golden bake
