Baked Skillet Pancake

Ingredients

For The Pancake

  • 70 g Plain Flour
  • 120 ml Milk
  • 2 Eggs
  • 2 Tbsp Granulated sugar
  • 1 tsp vanilla extract
  • 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 2 tbsp Butter

Toppings

  • Mixed Berries
  • 1 tbsp Icing Sugar
  • 1 Scoop Vanilla Ice cream
  • Golden Syrup

Instructions

  • Place the flour, milk, eggs, sugar, vanilla, baking powder and salt in a bowl and mix with a whisk or electric hand mixer until smooth
  • Rest the batter: Leave the batter to rest for around 20 to 25 minutes. This gives the flour time to absorb the liquid and thicken a little.
  • Preheat the oven to 210℃
  • Place 2 tbsp of Butter in a skillet pan and place in the oven for a minute or less until melted
  • Swirl the butter around the pan and pour the pancake Batter on Top
  • Place the skillet in the oven. Bake until the pancake is lightly browned, around 15 to 20 minutes.
  • Dust with Icing Sugar, top with your choice of mixed berries, add a dollop of Ice-cream and some golden syrup
  • Serve from the pan or transfer to a plate. Dust with icing sugar, berries, Ice-cream and syrup.
